Creamy Mashed Potatoes

Peeling potatoes used to be my least favorite chore in the kitchen, until my son taught be a trick he made up. This technique is a game changer when it comes to peeling potatoes. It makes it so much faster and easier.

Amy’s Chicken Chili

I made up a big pot of chili. It was a hit. We had extra containers so everyone could take some leftovers home as well. You can even freeze some for later if you have leftovers. Sugar Cookies - Best Ever & Easy

Best Sugar Cookies Ever!

I follow a blogger named Rachel Parcel.  She has a blog called pinkpeonies.com.  I have seen her post over the years about her family sugar cookie recipe. They always look so delicious, but I have a family recipe myself, and they happen to be my favorite thing in the world so I never even considered trying her recipe, until today.  Now I have a new favorite recipe.  Thank you Rachel Parcel.

I did make a few changes just to speed up the whole process.  The recipe is very similar, but I created a way to make the Valentines Day cookies without using a rolling pin. 

My two year old granddaughter and I decided we needed a no fail, faster way to make soft delicious sugar cookies. Her attention span does not make it easy to roll out and cut out.  I have to admit, even without a two year old helping, I have always wanted to find a faster way to make my favorite cookies.  This is going to be my go to method from now on.  If I don't want them to be heart shaped it will even be faster.

I used a cookie scoop, instead of a rolling pin. My two year old granddaughter, Lucy, pushed the cookies down with a glass, and then I formed them with the back of a butter knife to look like a rough heart cookie. Then Lucy pushed them down one more time. They were ready to bake so fast and easy. They looked pretty rough around the edges but after they were baked they looked as good as those done with cookie cutters.

Make sure you do not over-cook the cookies. When they come out of the oven slide the parchment paper with cookies off the cookie sheet and onto a cooling rack immediately. They will continue to cook and harden if you don’t get them off the cookie sheet. Using parchment paper allows you to take them off without waiting until they are cool.

Here is the fancy tools used to flatten out the cookies so I don't have to use a rolling pin. This is way faster.


I sprayed the bottom with spray grease and then dipped it in sugar to keep the cookie from sticking.  Lucy flattened the cookies for me.

I used the back of the knife to form a quick heart shape. 

 It doesn't have to be perfect.

The cookies look rough when they go in the oven, but don't worry...



They come out looking great after they have raised and expanded.



We kept some of them circular.


Add some frosting and sprinkles if you like.



They are so delicious and easy!

Future DIY Projects

This summer I have taken a break from DIY projects.  My second son is preparing to serve a full time mission for our church and it has taken all my efforts to help him get the necessary shopping and planning done.  He will be leaving in a few weeks and my other boys will be going back to school so I will be starting up on DIY projects around the house.  Now I just have to narrow down what to take on first.  I have a limited budget and the outdoor projects have to be done before the snow flies, which in Nebraska can be as soon as October.  I would love to have your opinion.  Should I take on the lousy kitchen counter-tops, refinish my table, or do an outside project?  I have to decide whether I am going to do home upgrades, or fun recipes as my next obsession.  Let me know what you prefer:)

Baked Hotdog

Our family loves a good baked hotdog.  We buy ours in bulk at Sam's Club and keep them in the freezer so we are always ready to roast a dog over the fire, put them on the grill or, bake them in the oven.

The first thing you need to do is bring the hotdog to room temperature so the dough will stick to it.  I took frozen dogs, warmed them up in hot water then dried them off with a paper towel.  If they come out of the refrigerator, pull them out and let them warm up for 10 minutes or so.  Just enough time for them to stop sweating.

The dough around the dog can be a refrigerator dough or made from scratch.  I make my dough so often I can do it in my sleep.  It really is fast and easy once you get the hang of it.  For my dough recipe check out the page on my blog at http://fiveorlesssteps.blogspot.com/2014/03/basic-dough.html.

After you make the dough, cut it into pieces large enough to wrap around the hot dog.  For additional tasty goodness, you can add ingredients to the dough before you wrap it.  Cheese, onions, or peppers our a great addition.

Mozzarella Cheese Can Be Added Right Before You Wrap The Hot Dog


Pinch Dough Around the Hot Dog Until It is Sealed Off


Place on Greased Cookie Sheet about an Inch Apart


Bake in 350 Degree Oven for 20 Minutes or Until Golden Brown

Serve With Your Favorite Condiments

Amy's Toffee Popcorn Recipe

I know I have a lot of caramel corn recipes on my blog.  The reason is, I love popcorn and each recipe is my favorite for different reasons.  Sometimes I am in the mood for a sticky sweetened condensed milk flavor, that can be made in 5 minutes, but it only has a few hours shelf life.  This one is great if you are having a get together and want something quick and easy.  But sometimes I want a batch of popcorn that has a toffee taste.  This one is not sticky because it is baked.  It takes a lot longer to make, but the shelf life it at least 2 weeks, not that it ever lasts that long around my house.

Whenever I make it, I always double the batch and make some for home and some to give away.

I have another similar recipe for caramel corn.  This one is a toffee recipe.  Some folks might not know there is a difference, but us popcorn lovers do.  It is kind of like when you are picking your Fiddle Faddle.  One is caramel and the other is butter toffee.  There is a difference:)  The recipe is a little bit different but the process of getting to the end result is the same.

Spray a large roasting pan
Pop a lot of popcorn.
I have measurements with the recipe but I personally never use them
I just keep popping until the roaster is 3/4 full
This is enough for a double batch of toffee
Remember to filter out the old maids!

Make sure you cook the toffee in a large sauce pan
It does boil up

When you first start it may look like it is too large, but trust me,
you will be glad for the extra room once you add the baking soda


Pour the toffee over the popcorn and bake

After it is baked, pour out on wax paper to cool
